What I Ate Wednesday #1 {Eating at Home}

Have you heard of What I Ate Wednesday?

I learned about it Monday, and apparently it’s all the rage in healthy living blogland!

Since I tend to photograph my food, I thought it would be easy to photograph everything I eat for one day, but it was a challenge!

Here’s what I ate yesterday:

Breakfast: Thin Mint Smoothie

My smoothie was based on this recipe from RFFMBT.  I love her recipes and her simplistic food pyramid!  I was surprised that it actually tasted like a thin mint cookie.  The oats gave it a cookie texture.

 

 

 

 

 

 

 

 

Morning Snack: Trail Mix, 1 Chewy Peppermint

Remember to portion out your trail mix. It’s a good snack, but LOTS of calories if you are eating from the jar.  I resorted to office candy because I left my carrots and hummus at home, and I was starving!

 

Lunch: Homemade Veggie Chili, Salad, Tortilla Chips, Unsweet Tea

Warm chili was perfect for a cold day in Memphis.  Eating leftovers for lunch gives me extra time to watch TV, nap, or play with the cat.

  

Afternoon: Water

I drink water at my desk ALL day. Also, I drank a full bottle during my TurboFire workout. Gotta stay hydrated!

Dinner: Roasted Sweet Potato, Celery, Peanut Butter, Granola

Random!  I call this “eat what’s in the fridge.”  When it’s just me, I don’t see the need to make a full meal every night.  I just eat what’s in the fridge until I’m not hungry anymore.
